1. Pan-seared scallops with butter and lemon
Ingredients:
Fresh or frozen scallops, butter, garlic, lemon, pepper, and parsley.

- Heat the pan or griddle until very hot.
- Sear the scallops for 1 minute on each side with a little butter.
- Finish with a touch of lemon and parsley.

Scallops release intense steam during the first minute. Increase the extractor hood speed right when you place them on the pan.
And remember: clean filters make the difference between “it seems to extract” and “it really extracts.”
2. Mushroom and ham scramble
Ingredients:
Mixed mushrooms, eggs, ham, garlic, oil, and pepper.
How to prepare:
- Sauté the mushrooms over high heat.
- Add the garlic and ham.
- Add the eggs and stir for 20–30 seconds.
Tip:
High-heat stir-fries create a sudden burst of smoke and aromas. Turn the hood on 5–10 minutes beforehand so airflow is already stabilised.
3. Pork loin medallions in white wine (casserole-style)
Ingredients:
Pork loin medallions, white wine, butter or oil, onion, rosemary, and pepper.
How to prepare:
- Quickly brown the pork in a pan or casserole.
- Add onion, a splash of white wine, and rosemary.
- Let it reduce for 8–10 minutes.
Tip:
The searing stage releases the most grease and steam. Use maximum hood power during those 2–3 minutes.
If you use recirculation, check your carbon filter before the busiest cooking days.
4. Spiced Christmas apples in a saucepan
Ingredients:
Apples, brown sugar, cinnamon, star anise, and a splash of sweet wine or water.
How to prepare:
- Place everything in a saucepan and cook for 12–15 minutes until tender.
- Reduce the juices until you get a glossy sauce.
Tip:
If using sweet wine, serve it at the right temperature: 10–14 °C works beautifully.
