They simmer slowly, surrounded by aromas, ingredients, and recipes that make us feel at home\u2014even when we\u2019re far away.<\/p>\n

Because during these days, the kitchen becomes what it has always been: the heart of the home<\/strong>. And at Frecan, we want to be there with you, sharing two timeless classics for the season:<\/p>\n

  • Vigilia<\/em> Stew to comfort<\/strong><\/b><\/li>\n
  • Torrijas<\/em> to sweeten the moment<\/strong><\/b><\/li>\n<\/ul>\n

    One\u2019s a spoonful of warmth, the other a sweet delight. Together, they bring tradition to the table.<\/p>\n

    ? Vigilia<\/em> Stew<\/h3>\n

    A humble, flavorful dish typically served on Fridays during Lent. No meat, but plenty of history. Featuring cod, chickpeas, and spinach.<\/p>\n

    Ingredients (for 4 people):<\/h4>\n
      \n
    • 300 g cooked chickpeas<\/li>\n
    • 200 g fresh spinach<\/li>\n
    • 200 g desalted cod<\/li>\n
    • 1 onion<\/li>\n
    • 2 garlic cloves<\/li>\n
    • 1 tsp sweet paprika<\/li>\n
    • 1 bay leaf<\/li>\n
    • 1 hard-boiled egg (optional)<\/li>\n
    • Extra virgin olive oil, salt and pepper<\/li>\n<\/ul>\n

      Instructions:<\/h4>\n

      1. Saut\u00e9 the chopped onion and garlic in olive oil until golden.<\/li>\n
      2. Add paprika, stir quickly, then add the spinach.<\/li>\n
      3. Incorporate the chickpeas, cod, and bay leaf.<\/li>\n
      4. Cover with water or light broth and simmer for 15\u201320 minutes.<\/li>\n
      5. Season to taste. Serve hot\u2014topped with a boiled egg if desired.<\/li>\n<\/ol>\n

        ? Torrijas<\/em><\/h3>\n

        The sweet queen of Holy Week. Crispy outside, soft inside, with hints of cinnamon and lemon.<\/p>\n

        Ingredients:<\/h4>\n
          \n
        • 1 day-old baguette or similar bread<\/li>\n
        • 500 ml milk<\/li>\n
        • 1 cinnamon stick<\/li>\n
        • Peel of 1 lemon<\/li>\n
        • 2 eggs<\/li>\n
        • Sugar and ground cinnamon<\/li>\n
        • Mild olive oil for frying<\/li>\n<\/ul>\n

          Instructions:<\/h4>\n

          1. Infuse the milk with cinnamon and lemon peel. Let it cool slightly.<\/li>\n
          2. Slice the bread and soak in the milk mixture.<\/li>\n
          3. Dip in beaten egg and fry in hot oil until golden.<\/li>\n
          4. Drain and sprinkle with sugar and cinnamon.<\/li>\n
          5. Want it sweeter? Drizzle with a little honey… and enjoy.<\/li>\n<\/ol>\n
