Together, they bring tradition to the table.<\/p>\n<h3>? <em>Vigilia<\/em> Stew<\/h3>\n<p>A humble, flavorful dish typically served on Fridays during Lent. No meat, but plenty of history. Featuring cod, chickpeas, and spinach.<\/p>\n<h4>Ingredients (for 4 people):<\/h4>\n<ul>\n<li aria-level=\"1\">300 g cooked chickpeas<\/li>\n<li aria-level=\"1\">200 g fresh spinach<\/li>\n<li aria-level=\"1\">200 g desalted cod<\/li>\n<li aria-level=\"1\">1 onion<\/li>\n<li aria-level=\"1\">2 garlic cloves<\/li>\n<li aria-level=\"1\">1 tsp sweet paprika<\/li>\n<li aria-level=\"1\">1 bay leaf<\/li>\n<li aria-level=\"1\">1 hard-boiled egg (optional)<\/li>\n<li aria-level=\"1\">Extra virgin olive oil, salt and pepper<\/li>\n<\/ul>\n<h4>Instructions:<\/h4>\n<ol>\n<li aria-level=\"1\">Saut\u00e9 the chopped onion and garlic in olive oil until golden.<\/li>\n<li aria-level=\"1\">Add paprika, stir quickly, then add the spinach.<\/li>\n<li aria-level=\"1\">Incorporate the chickpeas, cod, and bay leaf.<\/li>\n<li aria-level=\"1\">Cover with water or light broth and simmer for 15\u201320 minutes.<\/li>\n<li aria-level=\"1\">Season to taste. Serve hot\u2014topped with a boiled egg if desired.<\/li>\n<\/ol>\n<h3>? <em>Torrijas<\/em><\/h3>\n<p>The sweet queen of Holy Week. Crispy outside, soft inside, with hints of cinnamon and lemon.<\/p>\n<h4>Ingredients:<\/h4>\n<ul>\n<li aria-level=\"1\">1 day-old baguette or similar bread<\/li>\n<li aria-level=\"1\">500 ml milk<\/li>\n<li aria-level=\"1\">1 cinnamon stick<\/li>\n<li aria-level=\"1\">Peel of 1 lemon<\/li>\n<li aria-level=\"1\">2 eggs<\/li>\n<li aria-level=\"1\">Sugar and ground cinnamon<\/li>\n<li aria-level=\"1\">Mild olive oil for frying<\/li>\n<\/ul>\n<h4>Instructions:<\/h4>\n<ol>\n<li aria-level=\"1\">Infuse the milk with cinnamon and lemon peel. Let it cool slightly.<\/li>\n<li aria-level=\"1\">Slice the bread and soak in the milk mixture.<\/li>\n<li aria-level=\"1\">Dip in beaten egg and fry in hot oil until golden.<\/li>\n<li aria-level=\"1\">Drain and sprinkle with sugar and cinnamon.<\/li>\n<li aria-level=\"1\">Want it sweeter?
